Heat the oven
Preheat the oven to 420°F.
Build the base
Add the Boostcous to a large oven-safe baking dish or pan and scatter the chicken cubes evenly over the couscous.
Season the pan
Sprinkle in the salt, turmeric, sumac, and garlic powder. Add the tomato paste, date syrup, and olive oil.
Mix thoroughly
Mix everything well so the couscous and chicken are evenly coated, then spread the mixture into an even layer.
Add the water
Carefully pour the boiling water over the mixture.
Cover tightly
Cover tightly with wet parchment paper, then seal with a layer of foil.
Bake covered
Bake for 35 minutes, until the couscous is tender and the chicken is cooked through.
Crisp uncovered
Remove the foil and parchment, then return the dish to the oven and bake uncovered for 15 more minutes to lightly crisp the top.
Finish with parsley
Garnish generously with chopped parsley and serve warm.
