Simmer the base
Add milk, water, honey, vanilla, orange zest, and salt to a medium saucepan and bring to a simmer.
Cook the Boostcous
Add Boostcous, remove from heat, cover, and cook for 7 to 10 minutes until tender and slightly loose so it thickens as it cools.
Candy the almonds
Melt butter in a skillet, add sugar and salt to form a light caramel, then coat the almonds.
Blend the sauce
Blend raspberries with sugar and salt until smooth and adjust to taste.
Finish and serve
Spoon the warm pudding into bowls, add berries and raspberry sauce, then top with candied almonds, mint, and extra orange zest.
