Roast the chickpeas

Preheat the oven to 425°F. Toss garbanzo beans with olive oil, salt, pepper, and za'atar, then roast for 10 to 15 minutes.

Cook the Boostcous

Add Boostcous, remove from heat, cover, and cook for 7 to 10 minutes until tender and slightly loose so it thickens as it cools.

Prepare the greens

Remove kale stems and shred finely in a food processor.

Chop the mix-ins

Dice the red peppers, red onions, sun-dried tomatoes, and parsley.

Make the dressing

Shake together sun-dried tomato oil, vinegar, and the Greek Goddess dressing packet until combined.

Assemble

Layer Boostcous, kale, roasted garbanzos, peppers, onions, sun-dried tomatoes, and parsley. Finish with the dressing and toss well.
