Season the cooking liquid

Whisk the rice vinegar, maple syrup, arrowroot powder, and salt together while the water comes to a boil.

Steam the Boostcous

Remove the boiling water from the heat, stir in the vinegar mixture and Boostcous, cover, and let it stand for 15 minutes.

Cool until sticky

Fluff the Boostcous and spread it out slightly so it cools to room temperature and develops the tacky texture needed for rolling.

Assemble the rolls

Spread the seasoned Boostcous onto nori, then layer roasted red peppers, cucumber, grilled shrimp, avocado, and a swipe of tzatziki.

Slice and serve

Roll tightly, rest for a minute, then slice into bite-size pieces and serve with extra tzatziki on the side.
